Filling Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup frozen peas and carrots mix
  • 1 cup diced potatoes, pre-cooked
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 3 tablespoons fresh thyme, chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 package refrigerated pie crusts
  • 1 egg beaten

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large skillet, heat olive oil over medium heat. Add chopped onions and minced garlic, and cook until softened, about 5 minutes.
  • Stir in chicken broth and bring to a simmer. Whisk in heavy cream, then add thyme, salt, and pepper. Allow to thicken for 3-4 minutes.
  • In a large bowl, combine shredded chicken, sautéed onions and garlic, frozen peas and carrots, and diced potatoes. Pour the creamy thyme sauce over and stir to combine.
  • Roll out one pie crust into a 9-inch pie pan, pour in the filling, cover with the second crust, trim and seal the edges, and cut slits on top for steam.
  • Brush with beaten egg.

Baking

  • Bake for 30-35 minutes until the crust is golden brown and the filling is bubbling.
  • Let cool for 10 minutes before serving.

Notes

This pie can be customized with different vegetables, herbs, or spices. Enjoy it fresh or store leftovers in an airtight container for up to 3 days.
