Ingredients
  

Dressing

  • cup Olive oil (virgin)
  • cup White or red wine vinegar
  • 1 teaspoon Garlic powder or one garlic clove, minced
  • 1 teaspoon Chili powder
  • ½ lime Juice of ½ Lime
  • 1 teaspoon Granulated sugar
  • 1 teaspoon Salt

Main Ingredients

  • 5 pieces Roma tomatoes, seeded and diced
  • 15 ounces Black-eyed peas, drained and rinsed
  • 15 ounces Black beans, drained and rinsed
  • 11 ounces Corn, drained
  • 1 piece Red onion, diced
  • 1 piece Red pepper, diced
  • ½ piece Green pepper, diced
  • 1 cup Fresh cilantro, chopped
  • 1 bunch Green onions, sliced

Instructions
 

Preparation

  • In a medium bowl, whisk together the olive oil, white or red wine vinegar, garlic powder (or minced garlic), chili powder, lime juice, granulated sugar, and salt until combined.
  • In a large mixing bowl, combine the Roma tomatoes, black-eyed peas, black beans, corn, red onion, red pepper, green pepper, and cilantro.
  • Pour the dressing over the bowl of veggies and toss gently until everything is well coated in the dressing.
  • Refrigerate for about 30 minutes to let the flavors meld together.
  • Just before serving, toss in the green onions and serve with tortilla chips.

Notes

This dish tastes even better the next day; make it a day in advance and hold off on the green onions until serving. Customize with your favorite beans and veggies. Store leftovers in an airtight container for up to 3 days.
