  • 1.5 pounds Lean Ground Beef Browned in skillet
  • 1 medium Red Bell Pepper, seeded and chopped
  • 1 medium Yellow Onion, chopped
  • 1 ounce Taco Seasoning Mix
  • 2.5 cups Biscuit Mix, like Bisquick For the base
  • 1 cup Water For the biscuit mix
  • ½ cup Sour Cream To mix with other toppings
  • ½ cup Mayonnaise To mix with other toppings
  • 4 ounces Diced Green Chiles, drained
  • 1.5 cups Cheddar Cheese, Fiesta Blend, shredded, divided 1 cup for mixing, ½ cup for topping
  • 1 teaspoon Garlic Powder
  • ½ cup Salsa, mild For topping
  • Cooking Spray like Pam To grease casserole dish

Instructions
 

Preparation

  • Preheat the oven to 350°F.
  • In a large skillet over medium-high heat, add the lean ground beef and cook until no longer pink, stirring occasionally.
  • In a medium mixing bowl, combine biscuit mix and water and stir until well mixed. Spray the casserole dish with cooking spray and press the dough into the bottom. Bake for 5-8 minutes until lightly golden.
  • Add the chopped onions and red bell pepper to the skillet with the cooked beef and stir. Cook for about 4 minutes until the vegetables are tender. Mix in the taco seasoning.

Assembly

  • Spread the seasoned beef and vegetable mixture evenly across the baked biscuit layer.
  • In a medium bowl, mix together the sour cream, mayonnaise, drained green chiles, ¾ cup of shredded cheese, and garlic powder. Spread this mixture over the beef layer.
  • Add spoonfuls of salsa on top of the sour cream layer, then sprinkle the remaining shredded cheese evenly on top.

Baking

  • Bake the casserole uncovered for about 30 minutes or until hot and bubbly.

Notes

Make ahead by preparing the layers in advance. Can be stored in the refrigerator for up to 3 days. Reheat in the oven.
