  • 1/2 cup unsalted butter, softened
  • 1/2 cup white sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 1 tbsp honey (or molasses)
  • 1 1/4 cup all-purpose flour
  • 1/2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup quick oats
  • 1/2 cup old-fashioned oats

Preparation

  • Preheat your oven to 350F (180C) degrees. Line your baking sheets with parchment paper or silicone baking mats.
  • In a large bowl, beat together the softened butter and sugars until fluffy.
  • Beat in the egg, vanilla extract, and honey, scraping down the sides of the bowl as needed.
  • In a separate bowl, whisk together the flour, cinnamon, baking soda, and salt.
  • Gradually add the flour mixture into the butter mixture, carefully beating them together.
  • Gently fold in the quick oats and old-fashioned oats.
  • Form the dough into balls, measuring about 1 to 1.5 tablespoons, and place them about 2 inches apart on the prepared baking sheets.

Baking

  • Bake one cookie sheet at a time in the middle rack for about 10-13 minutes, or until the tops look just set.
  • Cool the cookies on the baking sheet for at least 10 minutes before transferring them to a wire cooling rack.

Notes

You can customize the cookies with chocolate chips, nuts, dried fruit, or lemon zest. Prepare the dough in advance and refrigerate it for up to 3 days.
