Ingredients
  

For the Sauce

  • 2 tbsp soy sauce
  • 1/2 tbsp hoisin sauce
  • 1/2 tbsp rice vinegar
  • 1/4-1/2 tsp crushed red pepper flakes Adjust for heat
  • 1 tsp toasted sesame oil
  • 1 tbsp brown sugar
  • 1/2 tsp garlic powder
  • 1/2 tbsp cornflour/cornstarch For thickening
  • 1/4 cup water For thickening sauce

For Serving

  • 1 can chickpeas (15 oz) Drained and rinsed
  • 1 cup Basmati or brown rice Cook according to package directions
  • 4 cups steamed vegetables Broccoli, red peppers, onion, and snow peas
  • to taste chopped green onion For garnish
  • to taste sesame seeds For garnish
  • to taste more red pepper flakes For a spicy kick

Preparation

  • Combine all the sauce ingredients: soy sauce, hoisin sauce, rice vinegar, crushed red pepper flakes, toasted sesame oil, brown sugar, garlic powder, cornflour mixture, and a splash of water in a large saucepan.
  • Stir over low-medium heat until the sauce is slightly thickened.

Cooking

  • Add the drained chickpeas to the sauce and warm for about 2-3 minutes until heated through.
  • Serve the chickpeas in a bowl alongside your cooked rice and an assortment of steamed veggies.
  • Top with chopped green onion, a sprinkle of sesame seeds, and a dash of red pepper flakes.

Notes

Make the sauce ahead of time and store it in the fridge. Cook rice in vegetable broth for extra flavor. You can swap out chickpeas for tofu or chicken as protein options.
