  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon salt
  • 3/4 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (optional) Add for extra texture

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together the flour, baking powder, spices (ginger, cinnamon, nutmeg, cloves), and salt until combined.
  • In a separate bowl, cream together the softened butter and sugar until light and fluffy, about 3-4 minutes.
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • Gradually mix the dry ingredients into the wet mixture until fully combined. If desired, fold in the chopped nuts and chocolate chips.
  • Divide the dough in half. Shape each half into a log about 12 inches long and 3 inches wide.
  • Place the logs on the prepared baking sheet, ensuring space between them for spreading.

Baking

  • Bake for 25-30 minutes until the logs are lightly golden and firm to the touch.
  • Let them cool for about 10 minutes.
  • Once slightly cooled, slice the logs diagonally into 1/2-inch wide pieces.
  • Arrange the slices cut-side down on the baking sheet and bake for an additional 10-15 minutes to dry out the biscotti.
  • Allow the biscotti to cool completely on a wire rack before storing them in an airtight container.

Notes

These biscotti are perfect for sharing and can be stored in an airtight container at room temperature for up to 2 weeks. For longer storage, freeze them for up to 3 months.
