  • 2 pieces overripe bananas Use very ripe bananas for sweetness
  • 1/3 cup maple syrup Can substitute with honey if needed
  • 1 cup flour Gluten-free flour can be used
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract

Optional Mix-ins

  • chocolate chips For a rich indulgent treat
  • chopped walnuts or pecans For a nutty crunch
  • dried cranberries or raisins For a fruity addition

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a mini muffin pan with paper liners or grease it well.
  • In a mixing bowl, mash the overripe bananas until smooth.
  • Stir in the maple syrup, vegetable oil, and vanilla extract until well combined and creamy.
  • In another bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Gradually mix the dry ingredients into the wet mixture, stirring until just combined.
  • Fold in any desired mix-ins.
  • Fill muffin cups about 2/3 full with the batter.

Baking

  • Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean.
  • Let cool slightly before transferring the muffins to a wire rack.
  • Enjoy them warm or at room temperature.

Notes

Can be stored in an airtight container for 3-5 days or frozen for 2-3 months. For best results, use bananas with lots of brown spots.
