  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil Can substitute with olive oil or melted coconut oil.
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Gluten-free blend can be used instead.
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt

Coating

  • 1/4 cup sugar For coating the donuts.
  • 1 tablespoon ground cinnamon For coating the donuts.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a donut pan.
  • In a large bowl, combine pumpkin puree, sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well mixed.
  • In another bowl, whisk together flour, baking powder, baking soda, ground cinnamon, nutmeg, ginger, and salt.
  • Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.

Baking

  • Fill the donut pan with the batter, about 2/3 full.
  • Bake for 15-18 minutes or until a toothpick comes out clean.
  • Let the donuts cool slightly before removing them from the pan.

Coating

  • In a small bowl, mix the sugar and cinnamon for the coating.
  • Roll the warm donuts in the cinnamon sugar mixture before serving.

Notes

These donuts are best eaten fresh, but they can be stored in an airtight container at room temperature for up to three days. You can prep the batter a day in advance and keep it refrigerated.
