Ingredients
  

Casserole Base

  • 4 cups roasted sweet potatoes (mashed) You can use freshly roasted or store-bought mashed sweet potatoes.
  • 1/2 cup maple syrup Pure maple syrup is recommended for the best flavor.
  • 1/4 cup brown sugar Can be light or dark brown sugar based on preference.
  • 1/2 cup raisins Feel free to substitute with other dried fruits.
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup mini marshmallows For a toasted flavor, use toasted coconut marshmallows.

Topping

  • 1 cup pecans (chopped)
  • 2 tablespoons maple syrup (for topping)
  • 1 tablespoon coconut oil (melted) Melted butter can be used as an alternative.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, mix the mashed sweet potatoes, maple syrup, brown sugar, raisins, cinnamon, and nutmeg until well combined.
  • Gently fold in the mini marshmallows.
  • Transfer the sweet potato mixture to a greased baking dish, spreading it evenly.
  • In a separate bowl, combine the chopped pecans, melted coconut oil, and remaining maple syrup. Stir until the pecans are fully coated.
  • Sprinkle the pecan mixture evenly over the sweet potato layer.

Baking

  • Bake for 30-35 minutes or until heated through and the topping is golden brown.
  • Serve warm.

Notes

This casserole can be made ahead by preparing the sweet potato mixture a day in advance. Store in the refrigerator and add pecan topping before baking. Leftovers can be stored for up to 3 days.
