  • 2 cans white beans (cannellini or great northern) Rinsed and drained
  • 1 can diced green chiles
  • 1 cup corn (frozen or canned)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper To taste

Preparation

  • In a large pot, heat a drizzle of olive oil over medium heat.
  • Add the chopped onions and minced garlic, sautéing until the onions are translucent and fragrant.
  • Toss in the chicken breast, allowing it to cook until browned on all sides.
  • Stir in the green chiles, corn, and white beans, followed by the chicken broth, cumin, chili powder, salt, and pepper. Mix well.
  • Bring the mixture to a gentle boil, then reduce the heat and let it simmer for 30 minutes.
  • Finally, shred the chicken right in the pot, mixing it into the creamy broth. Serve hot, garnished with your favorite toppings.

Notes

This chili tastes even better the next day. You can make a batch ahead of time for easy reheating. Leftovers can be stored in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months.
