Preparation

  • Line an 8x8-inch baking dish with parchment paper for easy removal later.
  • In a large mixing bowl, combine the creamy peanut butter and honey (or maple syrup). Stir until smooth and creamy.
  • Sprinkle in a pinch of salt and mix well.

Mixing

  • Gently fold in the crispy rice cereal until evenly coated.
  • Fold in the mini chocolate chips or any other mix-ins you prefer.

Setting

  • Transfer the mixture to the prepared baking dish, pressing it down firmly.
  • Place in the refrigerator for about 30 minutes to set.
  • Once firm, lift out using the parchment paper and slice into bars or bite-sized squares.

Notes

These bites can be made in advance and stored in an airtight container in the refrigerator for up to a week. For a nutty flavor, try swapping in almond or cashew butter. You can also experiment with different mix-ins like dried fruits or shredded coconut.
