  • 15 oz pure pumpkin puree Use canned pumpkin puree.

For the poke filling

  • 1 cup sweetened condensed milk Adds moisture and flavor to the cake.
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon Enhances the autumn flavor.
  • ½ teaspoon ground nutmeg

For topping

  • 1 cup whipped topping (like Cool Whip) For a creamy layer on top.
  • ½ cup crushed graham crackers For a crunchy topping.

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  • Prepare the spice cake mix according to the package instructions, substituting water or milk with the can of pure pumpkin puree for a richer flavor.
  • Pour the batter into the prepared baking dish and spread it evenly. Bake according to package instructions (usually about 25-30 minutes), or until a toothpick comes out clean.
  • Once baked, remove the cake from the oven and allow it to cool for about 10-15 minutes.
  • With the handle of a wooden spoon, poke holes evenly across the cake. Go as deep as you can without breaking the cake!
  • In a bowl, mix together the sweetened condensed milk, vanilla extract, ground cinnamon, and nutmeg until smooth. Pour the mixture over the cake, ensuring it seeps into the holes.
  • Allow the cake to cool completely and then refrigerate for at least 2 hours, or overnight if you can resist!
  • Before serving, spread the whipped topping over the chilled cake and sprinkle with crushed graham crackers for a cozy finish.
  • Slice, serve, and enjoy the warm flavors of fall in every delicious bite!

Notes

This cake can be made a day ahead of time for better flavor. Store leftovers covered in the refrigerator for up to 3 days.
