Preparation

  • In your slow cooker, combine the sliced leeks, diced potatoes, and vegetable broth.
  • Add in the olive oil or butter for that creamy richness, and season your mixture with salt and pepper to taste.
  • Cover the slow cooker and set it to cook on low for 6-8 hours or on high for 4-5 hours.
  • Once the cooking time is up and your home is filled with the most inviting aromas, grab an immersion blender.
  • Purée the soup to your desired consistency, whether you prefer it silky smooth or with a bit of texture remaining.
  • If you're feeling indulgent, stir in the heavy cream at this point, and adjust the seasoning if needed.
  • Serve the soup hot, garnished with fresh chives if desired.

Notes

This soup is perfect for meal prep and can be refrigerated for up to three days or frozen for later use, just remember to leave out the cream before freezing.
