  • 1 lb ground beef Cooked and drained
  • 1 can Rotel tomatoes with green chilies Vibrant and spicy
  • 16 oz cream cheese Softened for easier mixing
  • 2 cups shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Preparation

  • In a skillet, cook the ground beef over medium heat until it's beautifully browned and fragrant. Drain any excess fat.
  • In a slow cooker, combine the cooked ground beef and the Rotel tomatoes.
  • Add in the cream cheese, shredded cheddar, garlic powder, onion powder, and sprinkle with salt and pepper. Stir well until the cream cheese begins to melt.

Cooking

  • Cover the slow cooker and set it to low, allowing the mixture to simmer for 2-3 hours, stirring occasionally.
  • Serve warm, paired with crispy tortilla chips.

Notes

Feel free to add jalapeños for spiciness or fold in mashed avocado before serving for a creamy twist. This dip can be made ahead and reheated, and leftovers can be stored for up to 3 days.
