Pudding Ingredients

  • 200 g pitted dates
  • 250 ml boiling water Used for soaking the dates.
  • 1 teaspoon baking soda
  • 100 g unsalted butter, softened
  • 150 g brown sugar For the pudding.
  • 2 large eggs
  • 200 g self-raising flour
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Toffee Sauce Ingredients

  • 150 ml heavy cream
  • 100 g brown sugar For the sauce.
  • 100 g unsalted butter For the sauce.
  • 150 ml heavy cream For the sauce.

Instructions
 

Preparation

  • Preheat your oven to 180°C (350°F) and grease a baking dish.
  • In a bowl, combine the pitted dates and boiling water. Let sit for 10 minutes, then stir in baking soda.
  • In another bowl, cream together the butter and brown sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla.
  • Gradually mix in the dry ingredients, followed by the date mixture.
  • Pour the batter into the prepared dish and bake for 30-35 minutes, or until a skewer comes out clean.

Toffee Sauce Preparation

  • Meanwhile, to make the sauce, combine the butter, brown sugar, and cream in a saucepan over medium heat. Stir until the sugar dissolves and the sauce is smooth.

Serving

  • Once the pudding is done, poke holes in the top and pour some of the sauce over it. Let it soak for a few minutes before serving with more sauce and whipped cream or vanilla ice cream.

Notes

Make a day in advance for best flavor. Store in the fridge and reheat before serving.
